Ingredients

  • 1/4 cup Water

  • 4 tablespoons Arabic Gum

  • 3/4 cup Water (maybe a bit more)

  • 1 cup Sugar

Directions

  • Bring 1/4 water to a boil. Use enough water so you have a full 1/4 cup after evaporation.
  • Spoon four tablespoons of arabic gum into a glass bowl large enough so you can whisk the contents. Pour the boiling water over the arabic gum, whisk until well combined. Let it sit for four hours to hydrate.
  • Using a rubber spatula, put the hydrated arabic gum into a measuring cup and add enough water to bring the total volume to one full cup.
  • Put the water/gum arabic mixture into a sauce pan, add one cup sugar, and bring to a boil until sugar dissolves. Sugar should dissolve pretty quickly.
  • Pour gomme syrup into a glass bottle or jar. Liquid is hot; be careful glass doesn’t break. You can put a some hot water into the glass to bring up the glass’s temperature before adding hot syrup.
